Buttermilk Pancakes

 2 eggs
 2 cups buttermilk
 2 cups all-purpose flour
 2 tbsp sugar
 2 tsp baking powder
 2 tsp baking soda
 1 tsp salt
 4 tbsp unsalted butter, melted
 ½ tsp vanilla extract
 1 tbsp vegetable oil
 Cinnamon
 Coconut oil
 Almond extract

In a bowl using an electric mixer, beat the eggs until frothy 2-3 minutes.

Turn off the mixer and add all of the ingredients. Continue to beat until the mixture is smooth, 2-3 minutes more
