 ½ cup freshly grated Parmesan cheese
 3 tbsp extra-virgin olive oil
 3 tbsp freshly squeezed lemon juice
 1 ½ tsp anchovy paste - or 2 anchovy fillets
 1 ½ tsp Dijon mustard
 1 large garlic clove
